If you are here, you probably love Mac and cheese just as much as me. When I first found out I was allergic to gluten and dairy the saddest part was losing out on that delicacy. To top it off I found out I was allergic to almonds and cashews which are always used for alternatives! Not anymore folks!
I introduce to you the dairy free, nut free, gluten free, oil free Cauliflower Cheezy Mac!

Ingredients:
Gluten Free pasta of your choice (I like Barilla, the stuff in the blue box)
1/2 a yellow onion
3 cloves garlic
3 cups chopped cauliflower
1 cup vegetable stock (or water)
1tsp white vinegar (or 2tsp lemon juice)
1/2 tsp coconut aminos
salt
nutritional yeast
Instructions:
boil your cauliflower
while you do that, cut up your yellow onion & your garlic!
next, you are going to get a pan & sauté the onion & garlic together! If you are worried about it sticking to the pan, use a little bit of canned coconut milk! Works great as an oil alternative!
once your cauliflower is soft & your onions & garlic are sautéed add them all into the blender. Also add, 1 cup vegetable stock, 1tsp white vinegar, 1/2tsp coconut aminos, salt & nutritional yeast to taste (I started with 1tsp salt & 1tbsp nutritional yeast)
boil your pasta if you haven’t started yet!
After you blend your cheezy goodness you can pour it over your pasta and viola!
