Coconut Rice Bowl: Quick, Easy, Delicious

In a pinch and don’t want to take an hour to cook? Or maybe you just don’t feel like cooking? Then this is the meal for you! It is our go to & our absolute favorite!

Let’s dive in:

Step 1:

Boil a bag of edamame & peas (or throw them in the microwave if you have one)

Step 2:

Cook one cup of jasmine rice

Our favorite part about this step is adding in a tbsp of garlic powder when you put the rice into boiling water.

Step 3:

While the rice is cooking it is time to prepare your sauce, the magic sauce!

It takes four simple ingredients:

1 tbsp apple cider vinegar

1/2 tbsp coconut sugar (sometimes I do a tbsp)

1 tbsp liquid aminos (soy sauce if you’re not gluten free)

4 tbsp coconut milk

Whisk it all together

Step 4:

Once the rice is cooked you are going to add the magic sauce and stir it all up! Then add it to your bowls

Step 5:

TOPPINGS

Edamame

Peas

Carrots (I like to peel them with a peeler)

Cucumber (use the same little tool, or cut them up into bite size pieces)

Avocado

BLUEBERRIES! (it sounds weird but this MAKES the meal!)

If you like a little spice, add some sriracha and there you have it! The easiest, tastiest meal we’ve made yet!
