You have not had peanut butter until you have tried Eliot’s Nut Butters from Co-op Market! One of our favorites is the Espresso Nib Peanut Butter which we like to put it in our smoothies & oatmeal!
Today however we are going to be making a Pad Thai meal with the delicious Eliot’s Spicy Thai Nut Butter as the base and it is going to blow your mind!
Ingredients:
8 oz Rice Noodles (we prefer Helen’s Asian Kitchen)
1/2 cup Eliot’s Spicy Thai Nut Butter
2 tbsp Liquid Aminos (or soy sauce) (soy sauce DOES contain wheat, Liquid Aminos tastes the same and does NOT)
2 tsp Brown Sugar
5 tbsp Warm Water
Broccoli (chop it up)
Carrots (chop it up)
Scallions (chop it up)
Directions:
Boil your noodles (if you’re doing rice noodles read the directions carefully)
Whisk together the peanut butter, brown sugar, warm water, liquid aminos
** I like to put chickpeas in this for extra protein, through them in the air fryer or on a sheet pan until they’re crispy **
While your noodles & chickpeas are cooking sauté your vegetables
Add the sauce, noodles, veggies and chickpeas all together
Viola! Don’t forget to add scallions to the top!
