One Pot Wild Rice Pilaf

I didn’t even mean for it to happen but this is the PERFECT fall meal. I tweaked the recipe a bit from the one I found online and I wasn’t sure how it was going to turn out. Since I’m writing this post, you probably can guess, it turned out great!

Wild Rice Bowl

Supplies Needed:

Cutting board

Knife

Handy Dandy Cutting Tool (seriously will save you so much time) (thanks to my mother in law for that gift!!! careful it’s very sharp)

One Pot (we like this dutch oven)

Stirring Utensil

If cooking outside, Eureka! Grill

Ingredients Needed:

1 cup wild rice blend

2 1/2 cups vegetable broth

1/3 cup chopped onion (I did a white onion)

3/4 cup sweet potatoes, peeled & chopped

1/2 cup walnuts

1/4 cup cranberries

1 tsp cinnamon

2 cloves garlic, minced

1/4 tsp ground cloves

salt, pepper to taste

Instructions:

  1. In the large pot add a little bit of vegetable broth for frying. Add the onions, garlic, sweet potatoes and wild rice blend
  2. Fry everything for about 5 minutes. After, add vegetable brother and let it cook for 15 minutes (or until your rice starts to get softer)
  3. Last, add cranberries and walnuts. Then you are going to season with salt and pepper, cinnamon and ground cloves. Cook for around 5-7 minutes
  4. ENJOY 🙂
