Dairy Free Broccoli Cheddar Soup

Every time I would go to Panera I would get the “you pick two” broccoli cheddar soup and mac n cheese. Needless to say i fricken love dairy. When I first found out that dairy didn’t love me back I was so sad. Every now and again I would sneak some broccoli cheddar soup just because I missed it so much. I didn’t care what the consequences were after.

I have since learned that eating things your body doesn’t agree with will only harm you in the long run. So I decided it was time to whip up a broccoli cheddar soup that fit within all my dietary restrictions.

Matt was the taste tester and gave it a 9/10…. let’s see what you think!

Ingredients:

1 tbsp sunflower butter (or tahini if you can eat sesame seeds)

4 cloves garlic, minced

2 slices GF bread (I used Schär)

1 onion chopped (the original recipe said one cup but I did the whole onion)

1/2 cup chopped celery

4 cups unsweetened plant based milk (I did homemade oat milk)

4 cups chopped broccoli (fresh)

3 cups chopped potatoes (I didn’t peel them, you can!)

1 15oz can cannellini beans, rinsed and drained

1/2 tsp dried dill weed

1/4 tsp smoked paprika

Sea salt & ground black pepper

Step 1: Prepare the croutons

Preheat the oven to 375. In a small bowl combine sunflower butter (or tahini) and 1 clove of minced garlic. Cut bread in 1/2 inch cubes. Add the bread to the mixture and toss to coat. Place on a baking sheet and bake it for 6-8 minutes or until crisp and lightly browned.

Step 2: In a large pot (that you have a lid for) cook the onion, celery and remaining garlic over medium for 3-4 minutes, stir occasionally and if it is sticking to the bottom of the pan add water (1 – 2 tbsp at a time). Add your milk, 2 cups of broccoli, potatoes, beans, dill weed and paprika. Bring to a boil and then reduce the heat. Put the lid on your pot and let simmer for 10 minutes or until potatoes are very tender.

Step 3: Use an immersion blender to puree the soup until it is mostly smooth. Add the remaining broccoli and cook for 4-5 minutes. Season with salt and pepper to taste!

Step 4: serve it in a bowl, top with croutons and enjoy!
