Whether you’re looking for a delicious healthy meal or just trying to cook with diet restrictions, this white bean chili one pot meal will knock your socks off! I will never not love a one pot meal. They’re so easy cook, easy to clean and 10/10 delicious.

Here’s what you’ll need:
Ingredients
1 tbsp avocado oil (or canned coconut milk to emit oil)
1 medium white onion (chopped)
3 garlic cloves (minced)
1 celery stalk (chopped)
1 green pepper (chopped)
1 jalapeño (chopped)
2tbsp flour (used Cassava, it coats things better)
1/2tsp cumin
1/2tsp salt
1 tsp chili powder
2 cans Cannellini Beans or Butter Beans
3/4c canned corn
1c vegetable stock
4 oz can green chiles
1/3c raw hazelnuts, cashews or macadamia
1c hot water
salt & pepper to taste
cilantro & tortilla chips for garnish
Step 1:
Heat oil or coconut milk in your pan, then add onion and cook until slightly browned
Step 2:
Add the garlic, celery, green pepper, and the jalapeño pepper, continue to cook for 3-4 minutes until veggies are tender
Step 3:
Add flour, cumin, salt, chili powder and mix evenly to coat the veggies
Step 4:
Add the beans, corn, veggie stock and chiles – mix it all together. Reduce the heat to low and let cook for 15 minutes
Step 5:
Put your nut of choice in a blender with your hot water and blend until you don’t have anymore chunks
Step 6:
Add it all together, cook for a couple more minutes and then use an immersion blender to make it less chunky
Step 7:
Garnish that bad boy and eat up!
