We love a one pot meal and we especially love one that takes less than 30 minutes to cook with minimal prep!
- vegetable broth
- canned coconut milk
- canned diced tomatoes
- red curry paste
- frozen gren beans
- red bell pepper
- green onions
- Step 1: put 1c quinoa, 1.5c vegetable broth, 1c canned coconut milk, 2c canned diced tomatoes, 1tsp red curry paste and 1tsp curry powder into your pot. Put on medium heat for 7 minutes. (no lid throughout the entire cooking process)
- Step 2: Add 1 red bell pepper (chopped into medium pieces), 2c frozen green means and 3 green onions (chopped). Cook for 6 minutes.
- Step 3: Add 2c chopped broccoli and cook for 8-10 more minutes or until quinoa is ready. Add salt & pepper to taste!
- Step 4: dig in!
