One Pot Meal: Cajun Orzo

Another fabulous one pot meal and it takes less than 30 minutes to cook!

Disclaimer: this one is a little bit spicy so if spicy is not your friend you may want to leave out the jalapeño and instead of the cajun seasoning double up on the other spices.

Ingredients:

  • canned coconut milk (2tbsp)
  • 1 yellow onion (diced)
  • 5 cloves garlic (diced)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 jalapeño (diced)
  • cajun seasoning (1tbsp)
  • paprika (1tsp)
  • dried oregano (1tsp)
  • black pepper (1tsp)
  • 4oz can green chiles
  • 15oz can kidney beans (drained & rinsed)
  • 1 package GF Orzo
  • vegetable broth or water (1.5cups)
  • crushed tomatoes from a can (1cup)
  • Toppings: green onions, cilantro, avocado

Instructions:

Step 1: heat 2tbsp of your canned coconut milk in your dutch oven over medium heat. Add the onion (1 medium onion diced), garlic (5 cloves), red & green bell peppers (diced), and jalapeño (diced)(if you like spicy).

Step 2: Add in your cajun seasoning (1tbsp), black pepper (1tsp), paprika (1tsp), and oregano (1tsp). Mix it all together and let cook for 5 minutes, stirring frequently.

Step 3: Add the rest of the ingredients (4oz can green chiles, 15oz can kidney beans, orzo, 1.5c broth or water, 1c crushed tomatoes) and stir to combine. Bring the mixture to a boil, cover, lower the heat and let simmer for 20 minutes.

Step 4: It’s time to heat! Throw on your toppings & enjoy!
